About the venue
– Pancho’s Pizza is a full-service, dine-in Italian restaurant with table service and regular function bookings. Food is prepared on site by our kitchen team.
Role purpose
– Lead day-to-day service and functions, team performance, compliance and cost control to deliver consistently excellent guest experiences.
Key responsibilities
– Work with the Head Chef on seasonal offerings and tailored event menus.
– Control purchasing and inventory; set/monitor price points; reconcile POS and prepare weekly summaries.
– Ensure compliance with food safety, hygiene and WHS; maintain a clean, well-presented dining room and Bowls green areas.
– Manage reservations and floor operations; supervise service flow and guest recovery.
– Recruit, train, roster and supervise FOH/BOH; monitor sales, labour % and COGS against targets.
– Report weekly results; contribute to budgets, local marketing such as running promotion in collaboration with carina bowls club, and special function planning for the club members and guest.
Minimum requirements:
– At least 2 year recent experience managing a full-service café/restaurant (not fast food/limited-service).
– Hands-on shift leadership with proven rostering, training and service capability.
– Confident with POS, ordering/inventory and KPI reporting (sales, labour, COGS).
– Strong customer focus and calm problem-solving in peak periods.
– Availability for evenings/weekends/public holidays as required.
– Experience commensurate with an ANZSCO Skill Level 2 manager (e.g., Diploma in Hospitality Management and/or several years’ relevant management).
Desirable
– Diploma or higher in Hospitality Management (or similar).
– Function/event coordination; RSA and/or Food Safety Supervisor.
